No-Fry Chicken-Fried Steak

This is my favorite steak!  And it’s very healthy for you.  This is also the recipe responsible for a broken pan.  So, if you don’t already have a meat mallet, you might want to go purchase one before you make this : )

This is my version of Dr. Phil’s recipe found in his book The Ultimate Weight Solution Cookbook. 

4 top round or sirloin tip steaks                          1 tsp. meat tenderizer

1 c. low-fat buttermilk                                             2 tsp. paprika

1 cup oat flour or finely ground uncooked old-fashioned rolled oats.

1 tsp. onion powder                                                  1 tsp. salt

1/2 tsp. garlic powder                                            1/4 tsp. black pepper

Pound meat with a meat mallet or bottom of a large, heavy saucepan  The handle came off our saucepan as I was beating it so I recommend the meat mallet : )  Pound it to 1/4 inch thickness.  Sprinkle on meat tenderizer.  Place in pan.  Pour buttermilk over the meat and marinade for 30 minutes.  In the meantime, combine the oat flour and seasonings.  Dredge the marinated steaks in the oat flour mixture and place on a baking sheet that has been sprayed with non-stick spray.  Bake in 400 degree oven until lightly browned.
