Marmalade Sweet Potatoes

One of my goals for my restaurant is to serve healthy foods.  Sweet potatoes are at the top of the list for healthy vegetables.  In fact, CSPI ranked the sweet potato number one in nutrition of all vegetables.

According to foodreference.com, sweet potatoes are high in the following: beta-carotene, vitamin A, vitamin B6 and vitamin C; fiber, thiamine, niacin, potassium and copper. They are also a good source of protein, calcium, vitamin E.  http://www.foodreference.com/html/sweet-pot-nutrition.html

This is a finger-licking good recipe for sweet potatoes.

My version comes from Cuisine at Home: Weeknight Menus.

1 1/2 lbs. sweet potatoes

1 cup of orange marmalade, melted

Preheat oven to 400 degrees F.  Coat a pan with olive oil.  Cut each potato into wedges.  Toss in marmalade.  Arrange on pan in single layer, then roast about 30 minutes, turning once.
