Bacon-Simmered Pinto Beans

These are really good!  Try them and you’ll see.

This is my version of the recipe found in Bon Appetit, May 2011.

1 1/2 lbs. of dried pinto beans that have been soaked overnight and drained

8 slices of bacon, chopped

2 onions, chopped

4 garlic cloves, chopped

1 jalapeno, seeded, diced

Kosher salt to taste

Fry bacon in large pot or Dutch oven until crisp.  Remove bacon.  Remove all but 2 Tbsp of bacon drippings.  Add onion, garlic, and jalapeno.  Cook for about 10 minutes or until soft.  Add beans.  Pour in enough water to cover beans by about 2 inches.  Bring to a boil, then reduce heat to low and cook about 2 hours or until beans are tender.  Add Kosher salt to taste.

When serving, top with crumbled bacon,  your favorite cheese and/or cilantro.
