Pimiento Cheese

This is the best pimiento cheese we’ve ever made.

(This is my adaptation of the one found in Southern Living: 40 Years of our Best Recipes.)

1 1/2 c. real mayonnaise                             1 (4 oz) jar diced pimiento, drained

1 tsp. Worcestershire sauce                       1/4 tsp. ground red pepper

1 (8 oz) block sharp Cheddar cheese, grated

1 (8 oz) block extra-sharp Cheddar cheese, grated

(Do not buy the pre-shredded cheese.  It tastes better when you freshly grate the cheese.)

Stir the mayonnaise, pimiento, Worcestershire sauce, and red pepper.  Then add the cheeses and mix.
