Speedy Chicken Stew

This is an easy stew to make that everyone will like. Everyone in my family liked it.  We ate garlic bread with it.  Thank you, Mr. Food, for this recipe.


I got this recipe from The Best of Mr. Food Homestyle Quickies.
This is my adaptation of it.


2 (14 oz) cans chicken broth

1 heaping tbsp. of Orrington Farms Broth Base and Seasoning (I added this to the original recipe)

1 (20 oz) pkg frozen creamed corn

1 (10 oz) pkg frozen baby lima beans

1 large baking potato, diced

1/2 diced onion (you can use yellow, white, or in my case, red)

1/8 tsp. ground red pepper

1/4 tsp. thyme

1 whole rotisserie chicken, deboned (This is what makes it so easy!)

1 (14 1/2 oz) can diced tomatoes with garlic, basil, and oregano

1 (6 oz) can tomato paste


Combine first 8 ingredients in a Dutch oven.  Bring to boil over medium-high heat, stirring often.  Reduce heat and simmer 15 to 20 minutes.  Stir in chicken, tomatoes, and tomato paste; simmer 10 more minutes or until ready to eat.  Delicious!
