Black-Eyed Pea Dip

This is a delicious and healthy dip that you can make to take to any party.  It’s real simple and quick to make.

This is my version of Mr. Food’s “Black-Eyed Pea Salad” found in his book The Best of Mr. Food Homestyle Quickies. 

 

1 (15.8 oz) can black-eyed peas, rinse and drained

1 (11 oz) can white shoepeg corn, drained

1 small cucumber, seeded and chopped

3 stalks celery, chopped

1/4 c. chopped fresh cilantro

1 (10 oz) can mild diced tomatoes and green chilies, drained

3 slices of roasted red pepper, chopped

1/3 c. Lite Northern Italian with Basil and Romano Dressing and Marinade (I used Ken’s Steak House)

1/4 tsp. black pepper

 

Combine all the ingredients in a large bowl.  Cover and chill at least one hour before serving.  Serve with tortilla chips or Triscuits.

I can pretty well guarantee that everyone at the party will  say, “Mmmm!  Mmmm!  Oh, it’s so good!”
