Chicken Parmesan

These chicken nuggets are really good.  They are easy to make and best of all they are healthy for you!

This is my version of Chicken Parmesan from “The Healthy Heart Cookbook.”

1 1/2 c. of oyster crackers                    1/2 c. freshly grated Parmesan cheese

1/2 tsp. ground thyme                            1/2 tsp. dried basil leaves

1/2 tsp. paprika                                          1/2 tsp. salt

1/2 tsp. pepper                                           1 pkg. boneless, skinless chicken breast strips

1 tsp. olive oil                                            1 c. low-fat buttermilk

Put the oyster crackers in a gallon plastic bag and crush.  Add cheese and seasonings.  Shake until the ingredients are well-combined.

Dip chicken in buttermilk, then place in plastic bag and shake until chicken is well-coated.  Grease baking pan with olive oil.  Place chicken on baking pan and bake at 400 F for 30 minutes or until well-done.

Everyone in my family liked these.
