Bacon Meatballs

These are some awesome meatballs!  It’s like eating a bacon hamburger.  Everyone in my family liked these!

This is my version from Cuisine at Home April 2010.

1 pkg of bacon, diced                                      1/2 c. diced onion

2 lb. hamburger                                                1/2 c. bread crumbs

1/2 tsp. paprika                                                1/2 tsp. kosher salt

1/2 tsp. black pepper                                     1 egg, beaten


Cook bacon until crisp.  Remove on paper-lined lined plate.  Pour off all but 1 Tbsp. of drippings.  Saute onion in the same skillet in reserved drippings until softened.  Combine beef, bacon, onion, bread crumbs, paprika, salt, and pepper in a large bowl.  Stir in egg.  Form into meatballs and cook until done.  (Either fry or oven bake.)
