Roasted Broccoli

This is a good, healthy recipe for broccoli.  Hope you like it as much as we did.

 

This is my version of “Crispy Parmesan Broccoli” fromGood Housekeeping,January 2012 issue.

 

2 heads of fresh broccoli                                        1 Tbsp + 2 tsp. olive oil

1/4 c. freshly grated Parmesan cheese            1/4 c. panko bread crumbs

salt and pepper

 

Heat oven to 450 degrees F.  Toss the broccoli florets with 1 Tbsp olive oil.  Put broccoli on baking sheet.  Salt and pepper to taste.  Roast in oven for 15 minutes.  Combine Parmesan cheese, bread crumbs and remaining  2 tsp. olive oil.  Sprinkle mixture over roasted broccoli.  Bake an additional 5 minutes.
