Mandarin Orange Cake

This cake disappears quickly!  It’s that good!  The first time I made it was for a church potluck.   It was one of those desserts where there was nothing left except for a few crumbs.

I got this recipe from Hometown Cookbook compiled by Whitehouse Elementary PTA, 1983.


1 butter cake mix                                     4 eggs

1/4 c. vegetable oil                                 1 (11 oz) can mandarin oranges with juice

Mix all ingredients by hand until moistened.  Pout into 3 greased and floured round layer pans.  Bake at 350 degrees F for 15 minutes.  Let cool.


1 (8 oz) cool whip                                      1 (20 oz) can crushed pineapple with juice

1 small pkg vanilla instant pudding

Mix ingredients well.  Spread on cooled cake.
