Basil-Tomato Grilled Cheese

Guys and girls both like this sandwich. It’s best with home-grown tomatoes!  I used the ones out of my garden for these sandwiches.

This is my version of “Basil-Tomato Grilled Cheese” in Taste of Home’s Simple and Delicious magazine, July/August 2007.

8 slices bread (I used white)                            8 slices part-skim mozzarella cheese

2 large tomatoes, sliced                                  2 Tbsp. minced, fresh bail

1 tsp. olive oil                                                 salt and pepper to taste

1/4 c. olive oil                                                 3 Tbsp. grated Parmesan cheese

1/4 tsp. garlic powder

On four slices of bread, layer cheese and tomatoes; sprinkle with basil, salt, and pepper.  Top with remaining bread.  In a small bowl, combine the oil, Parmesan cheese and garlic powder; brush over the outside of each sandwich.  Cook sandwiches on a griddle until golden brown on both sides.
