Strawberry Chicken Salad

This is very tasty and healthy.  I want to serve healthy meals at my restaurant.  This will definitely be one I will serve.

 

This is my version of “Strawberry Chicken Salad” from Taste of Home’s Simple and Delicious, July/August 2007 issue.

 

1 (10 oz) bag of Italian lettuce mixture

1 (6 oz) bag of Tyson’s Grilled and Ready, Fully Cooked Chicken Breast Strips

1 1/4 c. sliced fresh strawberries

2 medium kiwifruit, peeled and chopped

olive oil

fresh lemon slices

 

In a large bowl, combine the first four ingredients.   Serve on plate.  Drizzle olive oil over serving and squeeze juice of fresh lemon slice over serving.  Enjoy something that is deliciously light, healthy, and filling.  (Kevin Wilson)
