Healthy Broccoli Cheese Soup

This was delicious, even my dad liked it.

1 onion, chopped
3 heads of broccoli, plus trimmed stems
2 32 oz. Swanson Chicken Broth, Fat Free, 33% less sodium, no MSG
1 lb Velveeta Cheese
2 c. 2% milk
1 Tbsp garlic powder
3/4 c. cornstarch

Saute onion in about a cup of chicken broth. When done, add broccoli and all but one cup of chicken broth. Cook until tender. Add Velveeta and milk. Once blended, add garlic. Mix together cornstarch in one cup of chicken broth. When smooth, add it to pot.

I use an iron Dutch oven to cook this in.
