Greek Chicken Casserole

Thanks to Kevin for cooking another delicious and nutritious dish! Jace and I both liked this. This recipe comes from “1,000 Lowfat Recipes.” This is his adaptation.

1 1/2 tsp. olive oil 1 medium yellow onion, sliced
1 lb boneless, skinless chicken breast strips 1 zuchinni, chopped
1 14.5 oz can tomatoes with garlic and oregano 2 bay leaves
1 tsp kosher salt 1/4 tsp. pepper
3 oz. feta cheese

Preheat oven to 400 degrees F. Heat the oil in a Dutch oven. Saute onion for about 5 minutes or until onion begins to turn golden brown. Add the chicken and stir until cooked. Add zucchini and cook about 2 more min. Add the tomatoes. Stir in bay leaves, salt, and pepper. Simmer, covered for 10 minutes. Pour into a casserole dish. Add feta and place, uncovered in oven for 15 min. While this is baking, cook rice and garlic toast to complement your meal.
