Texas-Style Beef Chili

When Kevin was in Oklahoma City, he bought “cooking with spice” at Williams Sonoma. Shopping in that store was one of the highlights for him while watching the Thunder play was the highlight for his brother. This is a must try recipe since most chili recipes call for hamburger meat. This is his version from that recipe.


2 tsp. cumin powder 1/4 c. chile powder
1 Tbsp smoked paprika 2 tsp dried oregano
4 lb. round steak and/or stew meat salt and pepper
2 Tbsp Olive oil 1 large yellow onion,chopped
1 jalapeno, seeded and chopped 1 large red bell pepper, seeded and chopped
4 cloves garlic, minced 20 oz. beef broth
2 Tbsp yellow cornmeal

Salt and pepper beef. In a Dutch oven, heat 2 Tbsp Olive oil. In batches, cook meat until browned. Remove. Saute onion, peppers, and garlic until onion is softened. Add spice mixture of cumin, chile powder, paprika, and oregano. Stir in beef broth. Return beef to pot, cover, and reduce heat to low. Simmer until beef is for-tender, 1 1/2 to 2 hours. Transfer about 1/2 cc. of cooking liquid to a small bowl, andd cornmeal, and whisk well. Stir into chili and cook until thickened, about one minute.
