Healthy Chili Taco Soup

Kevin made this healthy taco soup. We celebrated our neighbor’s birthday with this soup and his homemade Chocolate Surprise Cake. It was a hit with all. He can make this for me monthly! This is his version of Turkey Chili Taco Soup found on the website “Fitness.”

1 lb lean hamburger meat 1 med. onion, chopped
1 bell pepper, chopped 10 oz RO*TEL Tomatoes
15 oz canned or frozen corn, thawed and drained
15 oz kidney beans, drained 8 ounces tomato sauce
16 ounces fat-free refried beans
1 packet reduced sodium taco seasoning, without MSG
2 1/2 cups fat-free low-sodium chicken broth

1. Cook hamburger meat in an iron skillet. Add onion and pepper and cook for 2-3 minutes. Add tomatoes, corn, kidney beans, tomato sauce, refried beans, taco seasoning, and chicken broth. Bring to a boil and simmer for 10-15 minutes.
Serves 6.
