Chicken with Anise

Kevin cooked this dish tonight and it was absolutely fabulous!  Everyone in the family loved it!  This would be something great to make for company.  This is his version from Cooking with Spice.  (Renee)

8 bone-in chicken thighs, skin removed

3 tangerines, grate the peel of two for zest, juice all three

coarse ground pepper

2 Tbsp. vegetable or canola oil

1 small yellow onion, finely chopped

2 cloves of garlic, minced

1/3 jalapeno pepper, chopped

1/4 piece fresh ginger, peeled and grated

1 cup water

2 Tbsp low sodium soy sauce

8 anise seeds

steamed rice for serving

Heat oil in skillet.  Pepper both sides of chicken.  Cook chicken until browned on both sides.  Transfer to plate.  Pour off all but 1 Tbsp fat from pot.  Add onion and jalapeno.  Cook until softened.  Add garlic, ginger, and tangerine zest.  Stir for 1 minute.  Add water, tangerine juice, soy sauce, and anise.  Bring to a boil, craping browned bits from eh bottom.  Return chicken thighs to pot, reduce heat to low, cover, and simmer for about an hour or until no longer pink.

Serve over rice.
