Chicken, Fruit, and Rice Salad

Kevin loves cooking healthy food.  Í have been trying to eliminate salt from my diet, so he’s adjusting recipes to meet my need.  This salad does not “appear” to be filling; however, it is.  For those who like things a little saltier, add Ranch dressing.  For Kevin and me, we loved it as is. This is his version from 1000 Lowfat Recipes.  (Renee)

1 apple, cored and cut into cubes, squeeze about 1 tsp lemon to prevent browning

1 cup cooked rice

2-4 cups cooked, skinless chicken breast

1 cup seedless red grapes

1/2 c. plain nonfat yogurt

1/2 c. walnuts

Green salad such as Hearts of Romaine

Combine apple, grapes, rice, and chicken.  Mix in yogurt.  Serve on a bed of lettuce.  Sprinkle walnuts on top.

In the summertime, you can add 1/2 cantaloupe.
