Pumpkin Chocolate Chip Cookies
The first time I made these cookies, I made them for my cousin Kristin. We made enough to share with a few other people who love pumpkin as well. The next time I made them was when my brother had friends over. They devoured a whole plateful. They are that good! This recipe is Pumpkin Chip Drops from Taste of Home’s Simple and Delicious Bonus Book Sept/Oct 2007.
1 cup of butter, softened
1 cup of sugar
1 cup of packed brown sugar
1 egg
1 tsp vanilla extract
2 cups all-purpose flour
1 cup quick-cooking oats
1 tsp baking soda
1 tsp ground cinnamon
1/2 tsp salt
1 cup canned pumpkin
1 cup (6 oz) semisweet chocolate chips
In a mixing bowl, cream the butter and sugars. Beat in egg and vanilla. Combine flour, oats, baking soda, cinnamon and salt; add to the creamed mixture alternately with pumpkin. Stir in chocolate chips. Drop by teaspoonfuls 2 in. apart onto greased baking sheets. Bake a 350 degrees for 12-15 minutes or until golden brown.
