Fiesta Fried Corn

I made this corn today for lunch.  It was quick, easy, and delicious.  This is my version from Texas Hometown Cookbook.  Since my mom is eliminating salt from her diet, I have made adjustments to the original recipe to a healthier one.  (Kevin)

4 slices low sodium bacon, cooked and crumbled

1 32 oz package frozen corn

1 red bell pepper, chopped

1 can green chiles

In a cast iron skillet, fry bacon until crisp.  Remove and crumble.  Stir in corn, bell pepper, and chiles.  Cook until done.  Spoon into a serving bowl.  Add crumbled bacon.  Enjoy!
