Chili Roasted Chicken and Potatoes

chili chickenKevin and I are trying to find healthy recipes that are either low in salt or where we can just eliminate it.  Since it snowed last night, my school was canceled, giving Kevin and me the day together to cook.  This recipe worked since we had all the ingredients at home and didn’t have to get out.  This is his version of Chili-Roasted Chicken and Potatoes from his Weight Watchers New Complete Cookbook.


1 Tbsp chili powder

2 tsp. smoked paprika

1 tsp. dried oregano

1 tsp. ground cumin

2 garlic cloves, minced

4-6 chicken breasts, bone in and skin on

4-6 baking potatoes, peeled and quartered lengthwise

Directions:  Whisk together all the seasonings.  Add enough water to make a paste.  Rub paste on the chicken, underneath the skin.  Place in oven proof dish.  Add sliced potatoes alongside the chicken.  Place in 300 degree oven for 1 1/2 hours or until done.  Remove chicken.  Before removing potatoes, swirl them around in the juices in the dish.  Serve.
