Peach Smoothie

This tastes like Kristin,” exclaimed Kevin as he took his first sip of this delicious drink. Kristin is his cousin, and after taking my first sip, I had to agree. Not that we’ve ever “tasted” Kristin, but it just reminds us so much of her. It is just as sweet and wonderful as she is. This is probably my favorite drink of all time! This is Kevin’s adaptation of the recipe from the cookbook “Jackson Hole Cooks” which he got while vacationing in Wyoming. It’s definitely “Summer in a glass!” (~Renee Wilson)

4 juicy ripe peaches, peeled and pit removed
Juice of 1/2 lemon
3 (6 oz) cartons of light nonfat vanilla yogurt
3/4 c. skim milk
5 ice cubes

Place all ingredients in a blender. Blend for about one minute. Pour into glasses. Drink and enjoy! Serves 4.

If you want to just make one serving:
1 peach
juice of 1/4 lemon
1 (6 oz) carton of light, nonfat vanilla yogurt
1/4 c. skim milk
2 ice cubes
Blend together.
