Baked Chicken, Jammin’ Rice, and Cantaloupe

If you are looking to cook a healthy meal that is delicious, then you will want to make this.  “Chicken Roasted with Red Rubbing Spices” is from 1,000 Lowfat Recipes.  “Jammin’ Rice” comes from Homecoming: The Diffie Family Cookbook.  These are my versions of those recipes. (Kevin Wilson)

Chicken Roasted with Red Rubbing Spices

1 whole chicken, skin removed

1/2 tsp paprika

1/2 tsp. ground cumin

1/2 tsp. ground coriander

2 tsp. chili powder

1/8 tsp. cinnamon

pinch of cayenne pepper

Mix all the spices together.  Rub over chicken.  Bake in a covered dish for 1 hour.

Jammin’ Rice

2 c. water

1 (15 oz can low sodium-no MSG chicken broth)

2 c. rice (not the quick cooking kind)

1/4 c. chopped Italian parsley

1/4 c. chopped cilantro

3 cloves of garlic, minced

juice of one lime

Cook water, chicken broth, and rice according to package directions.  Combine all other ingredients in a bowl.  Remove rice from pan and toss with a fork.  Slowly add rice to the blended mixture and fluff with fork.

Cantaloupe

Cut a ripe cantaloupe into chunks.  Serve with meal.
