Chicken Vegetable Medley

Tonight’s dinner was created by me and my mom.  It was healthy and delicious.  We added rolls to complete this meal. (Kevin Wilson)

5 lbs. boneless, skinless chicken breasts, cut into smaller pieces

6 potatoes, diced into large pieces

1 (2 lb.) bag carrots

1 lb. fresh green beans

1/2 c. + 1/4 c. Newman’s Own Olive Oil and Vinegar Dressing

Toss chicken with 1/2 cup of dressing.  Place in large baking dish.  Toss vegetables with remaining 1/4 cup of dressing.  Place on top of chicken.  Bake in 350 degree oven for 1 hour and 15 minutes.
