Smothered Steak with Mashed Potatoes and a Side of Blackberries

Wow!  This steak was a winner with everyone in my family!!!!  We will definitely be cooking this more often!!!!!  We just need rolls, next time! This comes from Weight Watcher’s Best of Five Ingredient 15 Minute Recipes Fall 2012.  P.S.  This took us longer than 15 minutes, but it was well worth it!

3/4 c. all-purpose flour

1/4 tsp. salt

1/4 tsp. black pepper

1 1/2 lbs. round steak

1 (15 oz.) can of fat-free, lower-sodium beef broth

1 onion, sliced

3 Tbsp. + 1 Tbsp. vegetable oil

Combine first 3 ingredients.  Pound steak and cut into strips.  Dredge steak in flour mixture, shaking off excess.  In a large cast iron skillet, place 3 Tbsp. oil and heat.  Fry steak on both sides until lightly browned.  Remove from skillet and place on a baking sheet.  Add 1 Tbsp. oil, then repeat with second batch of steak.  Once they are browned, add to the baking sheet and bake in a 350 degree oven until done.  In the meantime, add onion to the iron skillet and cook until translucent, scraping the skillet along the way to loosen browned bits.  With the beef broth, stir in 4 Tbsp. of flour and whisk until well blended.  Add to onions in the skillet.  Stir.  Return steak to skillet.  Stir gently until steak is saturated in gravy.  Serves 4.
