Herbed Chicken Salad Sandwiches with Mrs. Julie’s Salsa

This is a good, delicious chicken salad sandwich.  There are many variations to chicken salad, so this is one more you can add to your repertoire. This is my adaptation from Cooking Light August 2011.  (Kevin Wilson)

1 1/2 tsp. tarragon seeds

3 Tbsp. Kraft, reduced-fat mayo with olive oil

3 Tbsp. 2% plain Greek yogurt

1 Tbsp. fresh lemon juice

1/8 tsp. kosher salt

2 cups chopped, cooked chicken breasts (approximately 2)

4 sets of Nature’s Own Healthy Multi-Grain Sandwich Rounds

4 large Romaine lettuce leaves

8 thin slices of Red Delicious Apple

Combine first 5 ingredients in a large bowl.  Stir in chicken.  Top each bottom sandwich round with one piece of Romaine lettuce.  Spread chicken salad on top.  Add two thin slices of apple.  Add top sandwich round.  Serve with tortilla chips and fresh salsa.  (We bought our salsa this morning at the farmer’s market from our friend, Mrs. Julie Rice.)
