Chocolate-Cherry Thumbprint Sugar Cookies

This is a quick, easy, soft, and delicious cookie to make.  We served this to our guest of honor, Candice Stepan.  She liked it so much she requested Kevin make them for her on her birthday.  This is our adaptation from Paula Deen’s Quick and Easy Meals 2011, Special Issue.  (Renee Wilson)

1 (16.5 oz) package refrigerated sugar cookie dough

1/3 c. all-purpose flour

1 (21 oz) can lite cherry pie filling

1 c. semisweet chocolate chips, melted

Preheat oven to 350 degrees.  Grease cookie sheet with butter.  In medium bow., combine cookie dough and flour.  Beat at medium speed with an electric mixer until well combined.  Shape dough into 1 inch balls.  Place 2 inches apart.  Make an indentation in center of each cookie with thumb.  Bake for 8 minutes.  Remove cookies from oven, and press down indentations again.  Spoon about two cherries in center of each cookie and bake for 3-5  minutes more.  Remove from pan to wire racks.  Drizzle with melted chocolate.
