Chicken and Rice

This was a good, solid dish liked by everyone in the family.  This is Kevin’s adaptation of Chicken with Rice from Weight Watchers New Complete Cookbook 2011. 


1 1/2 lb. cooked boneless, skinless chicken breasts

2 tsp. olive oil

1 red pepper, chopped

1 onion, chopped

4 garlic cloves, minced

1 (14 1/2 oz) can diced tomatoes

1/2 c. reduced-sodium chicken broth

5 oz pkg of saffron rice + 3 oz white rice

1 c. frozen peas

Heat oil in skillet.  Add bell pepper, onion, and garlic, until softened.  Stir in tomatoes in their juice and broth; bring to boil.  Stir in rice.  Add chicken.  Bake, uncovered for 25 minutes.  Sprinkle with peas and bake covered an additional 15 minutes.
