Texas Sheet Cake Cookies

August 30, 2014

These cookies are so incredibly delicious, plan on making them as gifts to give to teachers, extended family members, and close friends at Christmas.  “Wow!” exclaimed my dad.  “Wow!” he repeated.  “I can’t believe they are so good.” They were so delicious, we shared a dozen with Matthew Johnson as his prize for having been the first person to have liked my page.  This recipe comes from

1/2 c. butter, room temperature

1/3 c. sugar

1 egg

1 tsp. vanilla

1 tsp. baking powder

1/2 tsp. salt

1 1/3 c. flour

1/2 c. semi-sweet chocolate chips, melted

1/2 c. butter

2 Tbsp. cocoa powder

3 Tbsp. milk

2 1/2 c. powdered sugar

Preheat oven to 350 degrees.  In a bowl, beat butter and sugar together until light, scraping sides frequently.  Add egg and vanilla, continue mixing until all ingredients are incorporated.  Mix in baking powder and salt.  Turn mixer to low and slowly add in flour.  Melt chocolate chips in microwave.  Add to cookie dough until evenly mixed.  Drop by measured tablespoon onto baking sheet.  Bake for 7 minutes.  Do not overbake.

For icing, in a medium saucepan, combine butter, cocoa powder and milk over medium heat, whisking until melted together.  Remove from heat and whisk in powdered sugar.  Pour icing over cookies and allow icing to set before serving.
