“Healthy” Bacon Grilled Cheese Sandwich

“Yum, I like this,” began Kevin.  Then he quickly amended that statement to exclaim, “No, I love it!” I had to agree with him.  This sandwich definitely has the “Wow” factor to be considered worthy of sharing.  This is his rendition of “Bacon Grilled Cheese” from Better Homes and Gardens, November 2009. 

4 slices of Whole Grain Oatnut Bread

1 Tbsp. reduced fat Mayonnaise with Olive Oil

1 tsp. honey

4 slices of low sodium bacon

4 slices of a thinly sliced tomato

8 thin slices of an avocado

4 slices of thin 40 calorie per slice Sargento’s Cheddar Jack cheese

Makes two sandwiches.

Blend the mayo and honey.  Spread on bottom 2 slices of bread.  Place ingredients in following order on top of bread slices per sandwich: 2 slices of tomatoes, 4 slices of avocado, 2 slices of bacon, 2 slices of cheese.  Top with remaining bread slices.  Grill until cheese is melted.  (We fried our bacon in a cast iron skillet, drained the grease, and then grilled it in bacon crumbs. Delicious!)  Serve with sweet potato fries!
