Cheesy Chicken and Rice Casserole

We are blessed to have Tabitha Randolph work with Kevin.  She and Kevin  peruse his collection of recipes, select one to make, and shop for ingredients.  For lunch today, they made this delicious, appetizing casserole.  This is their version from “Cheesy Chicken and Rice Casserole” on  Campbell Soup labels.

1 can Cream of Chicken Soup

1 1/3 c. water

3/4 c. uncooked long-grain enriched rice

1/2 tsp. onion powder

dash of garlic powder

dash of ginger powder

dash of chili powder

dash of black pepper

8 skinless, boneless chicken loins

1/2 c. Shredded Cheese

Stir soup, water, rice, and onion powder together and place in a 9 x 13 baking dish.  Top with chicken.  Season with garlic powder, ginger powder, chili powder, and black pepper.  Cover.  Bake at 375 degrees for 45 minutes.  Top with cheese.
