Frito Pie with Taco Soup

In celebration of Kevin’s grandmother’s birthday, he made one of her favorite dishes, Taco Soup.  We used Glenda Clark’s recipe from Recipes from the Heart, by Harvest Point Church.  This is his version of it.  He also made Triple Chocolate Cake for her birthday cake. (already posted under cake)

2 lbs. ground beef

1 green pepper, diced

1 onion

2 cans RoTel tomatoes

1 (16 oz) package of frozen corn

4 cups of water

1 pkg. taco seasoning

1 can stewed tomatoes

1 small can of no-salt tomato sauce

3 cups freshly cooked pinto beans

1 can pinto beans with jalapenos

2 tsp. cumin

1 pkg. dry Hidden Valley Ranch dressing

1 tsp. Louisiana Hot sauce.

Fritos

1 lb. freshly grated medium block cheddar cheese

sour cream

Saute’ meat, onion, and green pepper in a big pot.  Add all the remaining ingredients except Fritos and cheese.  Simmer for 1/2 hour or more.  Place a handful of Fritos in a bowl.  Pour soup over Fritos.  Top with cheese and sour cream.
