Hot Momma’s Chicken Sandwich

Thanks to Kevin, I have been dabbling with several spices as I’m throwing together a meal.  This chicken sandwich turned out to be such a hit with everyone, that I wanted to be sure to write it down so we could have it again.  Thanks Kevin for sharing your space with me!  Maybe you can add this to your menu.  Your customers can order Hot Momma’s Chicken Sandwiches!

thinly sliced chicken breasts

California Style Onion Powder

Garlic

Chili Powder

Black Pepper

Bacon

Onion, sliced

Romaine Lettuce

Sliced Medium Cheddar Cheese

Sliced Pepper Jack Cheese

100% whole wheat Oroweat Sandwhich Thins (or hamburger buns)

Large cast iron skillet

You must use a cast iron skillet for this one!!!!  Fry bacon.  Remove from pan when crispy.  Drain all but 1 Tbsp of bacon grease.  Fry onion.  Remove.  Place chicken breasts in cast iron skillet.  Liberally sprinkle seasonings on top side of chicken.  Fry for about 3 minutes.  Flip.  Liberally sprinkle seasonings on second side.  Fry for an additional 3 minutes or until cooked through.  Remove and cook remaining chicken breasts until all are cooked.

On bottom slice of bun, stack cheddar cheese, chicken breast, onions, bacon slices, lettuce, cheddar jack cheese, and top bun.  Enjoy this spicy, hot chicken sandwich!
