Chicken Parmesan

What is wonderfully delicious?  The Chicken Parmesan I cooked tonight.  This is my version from the book Simply Suppers by Jennifer Chandler.  Everyone in my family liked it.  I bet you will, too.  This is one of my favorites! ~Kevin Wilson

Basic Tomato Sauce: You can either purchase two (14 1/2 oz) cans of basil/garlic diced tomatoes and crush them in a food chopper or you can make the following homemade sauce also found in the same cookbook.

1 Tbsp olive oil

1/4 c. finely diced yellow onion

1 clove of garlic, minced

1 can (28 oz) crushed tomatoes (or you can buy canned diced tomatoes and crush in food chopper)

1 tsp. dried basil

1/4 tsp. sea salt

In a medium pan, over medium-high heat, warm the oil.  Add the onions and garlic and saute until soft.  Add the crushed tomatoes, basil, and salt.  Reduce the heat, cover, and simmer for 20 minutes.

Chicken Parmesan:

1 1/2 lbs. thinly sliced chicken breasts

2/3 c. all-purpose flour

(salt and pepper to taste / We omitted these since my family is trying to reduce sodium in our diets)

2 large eggs, slightly beaten

1 c. Italian-styled bread crumbs

1 c. Parmesan cheese

3 Tbsp. olive oil

1 c. shredded Mozzarella cheese

Basic Tomato Sauce

Preheat oven to 400 degrees.  Place flour in one shallow bowl.  Place beaten eggs in a second shallow bowl.  Combine bread crumbs and Parmesan cheese in a third shallow bowl.  If you are going to use salt and pepper, then the first thing you will want to do is salt and pepper the chicken slices. Then lightly dredge both sides of the chicken in the flour, shaking off the excess.  Next, dip the chicken in the egg wash, letting the excess drip off.  Then dredge the chicken in the Parmesan bread crumbs, evenly coating both sides.  In a large cast iron skillet, heat 2 Tbsp of oil.  Place the chicken in the skillet and cook both sides until golden brown.  Transfer to a baking sheet.  Remove any crumbs from the skillet, heat an additional tbsp of oil, then add second group of chicken.  Cook until golden brown on both sides.  Add to baking sheet.  Bake an additional 10 minutes in oven.  Remove from oven.  Spoon tomato sauce over chicken.  Sprinkle Mozzarella cheese on top of sauce, return to oven, and when cheese is melted (about 2 minutes) remove from oven.  Serve immediately.
