Praline Crunchies

Kevin made these delicious praline crunchies last night.  He let me take some with me to a Christmas party and they were a hit!  Just add them to a baked sweet potato, and you’ll have an instant sweet potato casserole, less all the work.  These are super easy and quick to make.  This is “tweaked” from his icing recipe to his Chocolate Praline Pecan Cake found in his cookbook, The Making of a Restaurateur. ~Renee Wilson

2 c. chopped pecans

1/4 c. butter

1/3 c. whipping cream

1 c. brown sugar

1 c. powdered sugar, sifted

2 tsp. vanilla

Bring brown sugar, whipping cream, and butter to a boil in a saucepan over medium heat, stirring often.  Boil 1 minute.  Remove from heat; whisk in powdered sugar and vanilla.  Add pecans, stirring until mixture begins to cool and thicken.  Drop bite-sized pieces onto parchment paper or wax paper to dry.  Should be dry within 15 minutes.  Ready to serve or store in an air-tight container.
