R and R Mexican Casserole

My Aunt Regina submitted this recipe as a Kickstarter backer.  When she and my Uncle Mal were dating, he would often come over to their house and eat dinner.  One night, my mom was cooking and she made this casserole.  My Uncle Mal fell in love with it.  So Aunt Regina started cooking it for him when they got married.  She calls it her (Regina’s) Mexican Casserole, but when she shared the recipe and story with us, she said it probably should be called Renee’s Mexican Casserole.  I decided to call it R and R Mexican Casserole giving them both credit for the recipe!  Thank you, Aunt Regina, for submitting this recipe.  It was great!  And it was so easy to make, we made two so we could share with a friend who was very appreciative to get a hot meal.  Add a salad to it to make it healthy!  ~Kevin Wilson

1 large pkg Doritos

1 lb. hamburger meat

8 oz. Velveeta

1 c. Rotel (can use no salt added to make it healthier)

8 oz. evaporated milk

1 small onion, chopped

1 c. Cheddar cheese, shredded

Brown hamburger meat and onion.  Add cheese, tomatoes, and milk.  Simmer 10 minutes.  Pour over Doritos and sprinkle with cheese.  Heat in oven until cheese melts.
