Roast Beef and Cucumber Sandwiches with Special Goddess Spread

If you ever come to Kevin’s restaurant, this sandwich is one you will find on his menu because it has star qualities!  The flavors blend remarkably well, tantalizing the taste buds with each bite.  In fact, the spread is so delicious, it could easily be made into a dip for vegetables.  This is his version of “Grilled Steak Sandwich” from Cuisine at Home, August 2010.  This recipe is brought to you by Kevin’s Backers/Crew.

Special Goddess Spread

1/4 c. mayonnaise with olive oil

2 oz. cream cheese

2 Tbsp. lite sour cream

1 Tbsp. Dijon mustard

Blend all ingredients until smooth.


12 thinly sliced roast beef deli meat

16 thin slices of a cucumber

4 onion rolls

Special Goddess Spread

Spread goddess spread on both sides of onion rolls.  Add three slices of roast beef to one of the bread slices.  Place 4 cucumber slices on top of the meat.  Put remaining bun on top.  Cut in half and serve with carrots or celery.
