Chocolate Chip Orange Muffins

All of my associations with muffins have been of a very sweet, cake-like breakfast food. So, when Kevin made these muffins, I was expecting just that. We will warn you now. If you are wanting to bake a muffin that is as sweet as a cake, then this recipe is not for you. However, if you are health conscious and are trying to have a limited amount of sugar in your diet, then this is something you will want to try. It’d be perfect with a cup of coffee, tea, milk, or orange juice for a mid-morning snack. Kevin’s version of “Chocolate Chip Orange Muffins” from Jackson Hole Cooks is brought to you by Kevin’s Crew/Backers.

Ingredients:
2 ¼ c. all-purpose flour
2 tsp. baking powder
½ tsp. baking soda
¼ tsp. salt
½ c. mini chocolate chips
¾ c. sugar (reserve one tbsp. for topping)
2/3 c. plain nonfat yogurt
1 tbsp grated orange peel
2/3 c. orange juice (reserve 3 tbsp for topping)
1 large egg and 1 egg white
3 tbsp coconut oil, melted
1 ½ tsp. vanilla

Directions:
Preheat oven to 350 degrees. Line mini-muffin pan with baking cups. In large bowl, stir together flour, baking powder, baking soda and salt. Add chocolate chips, mixing well. In a medium bowl, whisk together sugar, yogurt, orange peel, orange juice, the egg and egg white, oil, and vanilla. Add wet mixture to the dry ingredients and mix until blended. Spoon evenly into muffin cups, filling each almost to the top. Bake about 11 minutes or until lightly browned. In a shallow bowl, combine reserved juice and sugar. Dip tops of warm muffins into mixture. Serve warm. Makes about 3 dozen.
