Cajun Boiled Red Potatoes

February 7, 2015

Mmmm!  These are very flavorful!  This is Kevin’s version of the recipe from Cool Kids Cook.  Thank you, Kevin Backers/Crew for backing this recipe!

Creole Seasoning:

1 tsp. salt

1 Tbsp. onion powder

1 Tbsp. garlic powder

1 Tbsp. dried oregano leaves

1 Tbsp. dried sweet basil

1 1/2 tsp. dried thyme leaves

1 1/2 tsp. ground coarse black pepper

1 tsp. cayenne pepper

1 1/2 tsp. celery seed

2 1/2 Tbsp. sweet paprika

Mix thoroughly in a bowl.

Ingredients:

Creole seasoning from above.

2 tsp. garlic powder

1 tsp. sea salt

1/2 large white onion, diced

10 medium red potatoes, quartered.

Directions:

Fill a large pot with water, seasonings, and onion.  Bring to a boil.  Add potatoes and boil until tender, about 20 minutes.  Let sit in pot for 10 minutes to absorb flavor.  Strain and serve hot with seasonings from pot.  (Be sure to drain first so you can serve the seasonings with the potatoes!)
