Nutritious and Delicious Egg Medley

If you are looking for a nutritious and delicious breakfast, then look no further.  Bake this in a pie plate, slice it into thirds, and add slices of a Fuji apple for a complete breakfast.  Kevin’s version of “Bacon and Egg Pastries with Spinach and Roasted Red Peppers” from Cuisine at Home, April 2008 is brought to you by his wonderful backers/crew!

Ingredients:
4 slices of low sodium bacon
2/3 c. potatoes, small cubes
1/3 onion, chopped
1/3 red bell pepper
½ tsp. dried rosemary leaves

pinch of salt
2 c. fresh spinach
2 oz cream cheese
2 slices of Swiss cheese, grated
3 eggs
¼ c. milk
1 Tbsp flour
½ tsp. Kosher salt
2 Fuji apples

Directions:

Fry bacon until crisp; drain on a paper towel.  Pour off all drippings, saving only 1 tbsp.  Add potatoes, onion, salt, red pepper, and rosemary; cook until potatoes are tender.  Stir in spinach and crumbled bacon.  Set aside.

Beat cream cheese in a bowl with a mixer, then blend in eggs.  Add milk, cheese, flour, and seasonings, and beat until well blended.

Pour into Pyrex pie plate.  Bake in 400 degree F oven for 15 minutes or until set.  Slice into thirds.  Peel and slice apples.  Divide into thirds.  Plate and serve.
