Greek Chicken Cajun Potato Salad Explosion

What happens when you have leftovers from Cajun Potatoes, Caesar Green Beans, roasted chicken breasts, and a creative mind?  You get a new dish!  Lunch was quickly approaching, and all I could think about was what could we make with leftovers?  We warmed up the Cajun Potatoes and chicken breasts, and then diced them in a bowl.  We diced the green beans into 1 1/2 inch strips and added them to the bowl.  We threw in several tablespoons of black olives, leftover from the Caesar Green Beans recipe.  Feta cheese had been sitting unopened in the refrigerator for a few weeks, so we opened that and sprinkled it some in it.  Too we added leftover bread topping and dressing from the Caesar Green Bean recipe.  Lastly, we squeezed a generous amount of juice from a lemon on top.  The result?  Greek Chicken Cajun Potato Salad Explosion!  Now, this is something Kevin should add to his menu at his restaurant!!!!!
