Avocado, Orange, and Chicken Wraps, Paleo Style

This recipe is in honor of our pastor’s wife, Ashley Dagostino.  She is a wonderful lady whose love for Christ is evident in all she does.  She works endless hours behind the scenes for her church family.  You will always see a smile on her face.  “She is nice, kind, and caring,” Kevin added.  This healthy wrap provides a person, like her, with enough energy to complete the day’s tasks.  Kevin’s version of this recipe from Paleo Lunches and Breakfasts on the Go is brought to you by his backers/crew.

1 orange, peeled and diced into 1 inch pieces

1 large avocado, cubed

8 boneless, skinless roasted chicken strips, cooled and diced into cubes

8 large leaves of Romaine or Bibb lettuce

Mix the first 3 ingredients.  On four of the large leaves, evenly divide out mixture.  Add the other four leaves on top.  Ready to eat sandwich style.
