Five Star Chicken Salad

March 1, 2015

As I was reading all of the recipes from Nazarene South Texas Gals District Cookbook, several recipes caught Kevin’s attention.  The recipe “Chicken Salad” caught his attention as one he wanted to cook.  This was one of the easiest chicken salads we have ever made, that is, with Kevin’s special tweaking.  We tried it one way, using just four ingredients.  It was delicious, ranking four stars; however, we thought it was missing a flavor.  The next night, we added grapes to the list of ingredients and it definitely bumped it up into the 5 star/5 ingredients level!  This recipe is brought to you by Kevin’s Crew/Backers.

2 large chicken breasts, cooked and deboned

1 large Fuji apple, cut and diced into large chunks

1 cup small, seedless red grapes

1/4 c. chopped pecans

1/4 c. Kraft Real Mayo

Mix together.  Spread on bread or rice cakes.  Add slices of carrots or celery as a side for a delicious and healthy meal.
