Pineapple Salmon

Kevin loves to cook healthy and delicious meals, and this salmon definitely meets this criteria. This version of “Crazy Pineapple Salmon Teriyaki” from Hungry Girl to the Max is brought to you by Kevin’s Backers/Crew. Serve with steamed broccoli.
4 raw, skinless salmon fillets
1 large can pineapple rings
1 tsp. low sodium soy sauce
Preheat oven to 375 degrees. Lay 4 large pieces of heavy-duty foil on a baking sheet. Lightly grease each one with olive oil. Place a salmon fillet on each one. Drizzle ¼ tsp. soy sauce over each fillet. Top with 2 pineapple rings per packet. Fold foil until well-sealed. Bake for 20 minutes or until fish is cooked through. Serve with broccoli.
