Chicken and Broccoli Quiche

Kevin chose another winning recipe to make. This recipe comes from The Complete Step By Step Cookbook given to him several years ago by his Aunt Regina. “It has a really good flavor,” shares his dad. His version of “Turkey and Broccoli Quiches” is brought to you by Kevin’s Backers/Crew. Thanks to Tabitha Randolph for assisting Kevin in making this dish!
1 Ready made pie crust
1 lb chicken tenderloins, precooked and shredded (or Lemon Pepper Rotissiere Chicken)
6 oz. broccoli florets, cooked and drained
1 c shredded Gouda cheese
3 eggs
1 ¼ c. skim milk
Pinch of salt
½ tsp. pepper
¼ tsp. rosemary
Preheat oven to 375 degree F. Sprinkle ½ c. cheese on bottom of pie shell. Add chicken, and then broccoli. In a small bowl, beat eggs and milk together. Season with salt, pepper, and rosemary. Sprinkle remaining ½ c. cheese on top. Bake 25 or 30 minutes or until set.
