Delicious Corn Dish

This dish got rave reviews from those of us who are not that crazy about corn and those who are.  Rarely do I go for seconds with corn, but with this dish, I not only went back for seconds, but thirds, too!  Kevin and his dad love corn so they naturally liked this recipe.  Kevin made a few changes to a recipe he found at which brought it to perfection!  Thank you, Tabitha for helping Kevin cook this.  And, thanks to Kevin’s Crew for backing it!


1 tablespoon butter
4 cups corn (fresh or frozen or canned)
4 ounces light cream cheese, room temperature
1/3 cup skim milk
2 oz. jar of diced pimentos
¼ c. + 2 TBSP real bacon bits, low sodium (from package)
1/3 c. of shredded cheddar cheese
Melt the butter in a pan over medium heat, add the corn and cream cheese, stir until the cream cheese has melted. Mix in the milk, pimentos and ¼ c. bacon bits. Cook until hot, about 5 minutes. Pour into a serving bowl. Sprinkle cheddar cheese on top of corn casserole. Sprinkle 2 Tbsp. of bacon bits on top.
