AT&T Salad

Thanks to access to the world wide web through AT&T, Suddenlink, and other internet carriers, Kevin has access to millions of recipes. Kevin and our good friend Tabitha Randolph spend many hours on the internet searching for recipes Kevin deems worthy of cooking. This is one of those recipes they found on that comes from Kalyn’s Kitchen . It is the perfect blend of avocado, tomato, and tuna, thus we’ve renamed it AT&T in honor of its three main ingredients. I must say, after eating Kevin’s version of Kalyn Denny’s creation, “Tomato Salad with Avocado, Tuna, Cilantro, and Lime,” I have concluded this is one of the best salads I have ever eaten. I could definitely eat it once a week. And, it’s healthy, too! Thanks, Kalyn, for creating such an amazing salad! 1 large avocado, diced
pinch of salt
1 can tuna packed in water
1 large tomato, diced
1 green onion, diced all the way
½ c. cilantro, chopped
1 Tbsp + 2 tsp. fresh lime juice
2 tsp. extra virgin olive oil
Shredded lettuce.


Put avocado pieces into a bowl and toss with 1 T lime juice. Add a pinch of salt. Cut tomatoes and add to avocado in bowl. Drain tuna well, flake apart slightly with a fork, and add to bowl with avocado and diced tomatoes.. Add sliced green onion and chopped cilantro, then stir very gently to combine. Whisk together 2 tsp lime juice and 2 tsp olive oil. Add dressing to the salad and stir a couple of times, just enough to distribute dressing through salad ingredients. Serve on a bed of shredded lettuce.
