Chicken and Avocado Enchiladas

Kevin loves enchiladas!  He always orders them at Mexican food restaurants when he eats out.  He’s cooked and blogged several different enchilada recipes.  In fact, he even created some of the best enchiladas I have ever eaten!  I must say these enchiladas are almost as good as the ones he created!  This recipe comes from Kevin Lynch’s Closet Cooking which his cousin Kristin introduced him to.  Kevin Lynch creates amazing recipes!  He takes ordinary ingredients and turns them into spectacular dishes as he thinks outside the box.  So if you are looking for a recipe that is unique and different, we invite you to go to his website:  Thank you, Tabitha Randolph for helping Kevin cook these.  Thank you, also, to Kevin’s Crew for backing Kevin’s version of Kevin Lynch’s “Chicken and Avocado Enchiladas.”
1 cup chicken broth
1 cup salsa verde
1/2 cup sour cream
2 avocados
1 jalapeno, coarsely chopped (remove seeds for less heat)
1 teaspoon ground cumin
1/3 c. cilantro
1/2 lime, juice
4 cups cooked shredded chicken or debone a Rotisserie chicken
2 avocados, diced
2 cups cheddar cheese, shredded
2 cups monterey jack cheese, shredded
8 corn tortillas


Puree the chicken broth, salsa verde, sour cream, 2 avocados, jalapeno, cumin, cilantro, and lime juice in a blender or food processor.  Place chicken, 2 avocados, and half of the cheese in a bowl.  Add half of the sauce.  Coat the bottom of a large baking dish with some of the sauce, wrap the chicken and avocado mixture in the tortillas and place them in the dish. Top the enchiladas with the remaining sauce and cheese and bake in a preheated 350F oven until the cheese has melted and the sides are bubbling, about 15-20 minutes.
