Bodacious Burritos

Kevin chose this delicious and healthy burrito recipe to cook for tonight’s supper. I sure am glad he did! You won’t find a burrito this delicious and healthy at any fast food restaurant like Taco Bell or Taco Bueno. You can find it at Kevin Wilson’s Home Cooked Cuisine, though! Ingredients:
1 lb. lean ground beef
1 c. chopped onion
2 cloves, garlic, minced
½ green bell pepper, chopped
2 cans pinto beans, low sodium
1 4-oz can diced mild green chilies
2 tsp. chili powder
4 oz. tomato sauce
4 oz. salt free tomato sauce
1/8 tsp. Louisiana hot sauce
10 flour tortillas
2 c. mild shredded cheese
1 tomato, chopped
1 avocado, chopped
Shredded lettuce
Salsa

Directions:

Brown ground beef, onions, garlic, and bell pepper. Drain off liquid. Stir in the beans, chilies, chili powder, tomato sauces, and Louisiana hot sauce. Simmer, covered, for 10 minutes. Place about ½ c. mixture in the middle of a tortilla. Fold all sides. Place seam side down in a 9 x 13 dish. Sprinkle 1 c. shredded cheese over burritos. Bake in 350 degree oven for 5 minutes or until cheese is melted. Remove from oven. Sprinkle lettuce over burritos. Top with avocado, tomato, and remaining cheddar cheese. Serve with your choice of salsa.
