Honey-Mustard Chicken Nuggets

Kevin loves these chicken nuggets!  They pack a punch of flavor that is tantalizing to the taste buds.  They are also very moist!  Thank you, Tabitha Randolph, for cooking these with Kevin.  Kevin’s version of this recipe comes from 1,000 Lowfat Recipes and is brought to you by Kevin’s Crew/Backers.

Ingredients:

2 tbsp. honey mustard

1 tbsp real mayonnaise

1/2 c. skim milk

1 lb. skinless, boneless chicken breast, cut into 1-inch pieces

1/2 c. dry breadcrumbs

1 c. cornflakes

1/4 tsp. kosher salt

Preheat oven to 425 degrees.  Lightly oil a baking pan or coat it with nonstick spray.  Whisk together the mustard, mayonnaise, and milk.  Add the chicken and stir to coat.  Put the breadcrumbs, cornflakes, and salt in a food processor or blender.  Process until and fine and place on a dinner plate.  Remove the chicken one at a time and dip in the crumb mixture.  Turn to coat and place on the baking sheet.  Bake for 8-12 minutes.
